HISTORY:
The historical consumption of dietary fibre inulin has been extensively documented as inulin rich plants have served as main staple food sources for entire populations for centuries. Unfortunately, several portions of each food source would be required to consume a few grams of inulin, therefore not sufficient to maintain the daily requirement. In the 16th century Western European people consumed about 35g of inulin fibre per day. In the 19th century Australian aborigines consumed 200 – 300g inulin per day. During the Napoleonic war, Europe consumed large amounts of chicory as a substitute for coffee. In ancient Rome chicory was well known as a food and blood purifier and the Roman Legions used chicory as a daily liver tonic. It is mentioned in the Bible and the Koran, used as a bitter herb in the Passover. In Egypt it was likely used as a digestive aid necessary for good health, due to the quality of the food or food storage. Yet, with such a lengthy history it was only recently discovered by the modern food industry to be a highly functional and versatile food ingredient (important to note it is not an additive). It is estimated that current consumption of dietary fibre inulin is a 5g/day and in the USA less that 1g/day. Tests have indicated that for good intestinal health we need to consume between 15-20g/day of DuBurg dietary fibre inulin!
